Vanilla Cashew Balls

Prepping your meals can be a real time saver! Whether its main meals or snacks, it’s never a bad thing to have a lunchbox in the fridge or freezer to grab and go! Meal prep doesn’t have to be fancy food and it doesn’t have to be time consuming. As long as you aim to keep your meals balanced, they’re going to be very helpful in regards to fuelling your body. Not only can meal prep save time, but its convenient, cost effective and may help reduce food waste! So it’s a win win really.

To help inspire you, I have shared a few favourite recipes of mine that are great for making and taking on the go – and don’t worry, they’re super easy to whip up too!

Vanilla Cashew Balls

Ingredients
  • 1 cup cashews
  • 1/3 cup walnuts
  • 1/4 cup desiccated coconut - 1 tsp vanilla extract
  • 1/3 cup ground almonds
  • 1/3 cup soy milk
  • 80g dark choc
  • 1 tbsp coconut oil (melted)

Method

  1. Place the cashews, walnuts, coconut, vanilla, ground almonds and soy milk in a food processor. Blitz until the ingredients are combined and use a small spoon to scoop it out and roll into individual balls.
  2. Place the raw balls on baking paper and leave to chill in the fridge for 20 minutes.
  3. Melt the dark chocolate and mix in the coconut oil.
  4. Cover each ball in the chocolate coconut mix and leave to chill in the fridge for at least an hour.
  5. ENJOY!
Tip: make a batch of these and keep them in the freezer.
Total time 1 hr 30mins
